These muffins are much lower in fat and sugar than typical muffins, which is why they are good any time and don't leave you feeling bleh after eating. I'd also like to point out, that I am not a person who loves to cook, so when I do fix food, it's generally something quick and easy.
Emerald's Pumpkin Muffins
1 tsp. vanilla
3/4 cup pumpkin
1/2 cup unsweetened applesauce
1/4 cup milk (I've also used coconut milk, or vanilla soy milk. Any kind will do.)
1 and 1/2 cups whole wheat flour
1 cup old fashioned oats
1/4 cup sugar (I like raw cane sugar)
1 tsp baking soda
2 tsps baking powder
3/4 tsp each: cinnamon, nutmeg, allspice
1/2 cup bittersweet chocolate chips (I've gotta have my chocolate! I use Ghirardelli.)
Pour into muffin tin using paper baking cups, or grease and flour if needed. Bake at 400 degrees for 18-21 minutes or until spongy and lightly browned on top.
Makes 12 muffins. Enjoy! And feel good about showing yourself love with this good and good for you treat!
